Beef cheek meat, or cachete de res, is a flavorful, tough cut from a cow's face that becomes incredibly tender, rich, and "melt-in-your-mouth" when cooked low and slow using methods like braising, stewing, or slow cooking, making it perfect for barbacoa tacos, stews, and birria. It's known for absorbing flavors well but often requires trimming excess fat and silver skin before cooking to achieve the best texture and value.
